Pan-fried Shrimp with Green Curry Cashew Sauce

Serves 4

You can purchase bottled Thai green curry sauce in most supermarkets, but this recipe proves how quick and easy it is to make your own. Refrigerate any leftover sauce, covered, for up to 3 days.

1 slice (1/4 inch thick) peeled fresh ginger
3/4 cup plus 2 tablespoons roasted unsalted cashews
1/3 cup plain low-fat yogurt
1/4 cup packed cilantro leaves
1 tablespoon brown sugar
1 teaspoon curry powder
Coarse salt and fresh ground pepper
1 1/2 pounds peeled and deveined large shrimp
2 tablespoons olive oil

1 In a food processor, pulse the ginger until finely chopped. Add the 3/4 cup cashews; process until smooth, 2 to 3 minutes.
2 Add the yogurt, cilantro, sugar, and curry powder; season with salt. Process until incorporated, 1 to 2 minutes, scraping down the sides as needed. Transfer to a serving bowl; sprinkle with the remaining cashews.
3 Season the shrimp with salt and pepper. Heat 1 tablespoon of the oil in a large nonstick skillet over medium-high heat. Add half the shrimp; cook until opaque throughout, 2 to 3 minutes. Repeat with the remaining tablespoon oil and remaining shrimp. Serve the shrimp with the sauce.

Summary: Cooking for a family for the first time 2010-07-03
Comment: I'd "cooked" for myself and been a special occasion cook-- but never had the responsibility of daily meals for a family until recently. This book saved me. Instead of poring through multiple cookbooks and magazines, I started creating menus, shopping lists and dinners based solely on the recipes in this book. My family loved them and so did I.

The ingredients are easy to find and the preparation is close to the time estimates in the book (it always takes me a bit longer). The recipes are flexible enough to alter slightly (for instance, using frozen cooked shrimp instead of raw shrimp) and still turn out well. In fact, sometimes the recipes contain suggested substitutions. I like the organization by season, using seasonal vegetables and fruits. The breakdown of soups and salads, main courses, pastas, sides and desserts allows me to mix and match the recipes to create menus. Most of the recipes are low in saturated fats and it's easy to produce low carb meals for my diabetic mother.

My copy of this book is bristling with sticky notes as I mark the recipes I love or the new ones I want to try. I can't express how grateful I am for this book. Also the website, which I've used if I had a lot of one thing-- for instance a lot of broccoli-- and needed a recipe for that.

Once I'm more comfortable with recipes and menus, I'm sure I branch out, but for now, this book gives me a wealth of options.

Comment: I love this cookbook! Every recipe I have made so far is delicious and looks just like the photo. The prep time is less than 30 minutes for each recipe, which is important to me now that I am in my 70's. I just don't want to spend all day in the kitchen so this cookbook is perfect for anyone who wants to make yummy dinners that don't take a lot of time.

Comment: I really like this book because it uses simple ingredients and the recipes are simple and not time consuming. Great ideas for when you want to throw something together, but you don't want to spend a lot of time in the kitchen after spending an exhausting day at work. I love this recipe book and definitely a key staple in my kitchen!!

Summary: Best Cookbook I've Bought in Ages (And I buy a lot of cookbooks) 2010-06-17
Comment: This is a great cookbook. It is divided by seasons and has a picture for every major recipe. There is also side dish recommendations for the main dishes. I love cookbooks and buy a lot of them, but I have been cooking out of this one.

Comment: great pictures and easy to follow instructions but it is sometimes needlessly complicated, requires hard to find ingredients or cooking equipment most people don't own.
