Product Description

This collection of Danish recipes was inspired by the puffy round aebleskiver, an expression of the creative spirit of the Danish cook who turns ordinary mealtimes into succulent feasts. Included are recipes from Lisa Steen Riggs' personal collection, the staff of the Danish Windmill and Immigrant Museum, friends, and love-to-cook contributors. Among the over 115 recipes, you will find choices from the exotic to "Bedstemor's" (grandmother's) best. The Aebleskiver section includes hints and tips for using the special aebleskiver pan, cooking, and serving, as well as a variety of favorite recipes for these doughnut-like treats. Other savory, typically Danish recipes are found in Coffee Cakes; Sweet Breads; Pastries; Breads; Rolls; Rusks; Smorrebrod; Salads; Soups; Main Dishes; Vegetables; Sauces & Dressing for Meats, Fish & Vegetables; Cakes and Other Desserts; Cookes; and Drinks. You will find "Great Grandma's Danish Aebleskiver," "Danish Kringle," "Danish Rye Bread," "Some Favored Combinations" (smorrebrod), "Herring Salad," Holiday Fruit Soup," "Danish Stew with Dumplings," "Sweet-Sour Red Cabbage," "Creamy Danish Blue Cheese Dressing," "Danish Layer Cake," "Danish Anise Seed Cookies," " Chrismtas Punch," and much more. Interesting historical reference covers the Danish Windmill, The Danish Immigrant Museum, the Danish settlement of Elk Horn, as well as other Danish historic sites.

Summary: Aebleskiver Cookbook 2008-11-10
Comment: Nice little book. Was hoping for more aebleskiver recipes rather than general scandanavian recipes. Not all pertain to the special pan for aebleskiver.

Comment: The Ebleskiver Pan is a great investment for anyone who loves breakfast. Ebleskiver are a good pancake/waffle alternative. They make nice finger food for toddlers. Ebleskiver are homemade Dunkin Muchkins. The pan itself heats evenly and provides easy cleanup because of the preseason aspect of the surface. This will be on my holiday gift giving list.

Summary: Nothing could be easier... 2008-05-06
Comment: Tiny little book with so many recipes...easy to carry and use. The Bisquick recipe is the one I use the most and everyone loves it. Most of the grandchildren like to dip theirs in syrup...while the older folks like the powdered suger and preserves on the side. I'm very happy with this book.

Summary: Not quite a book 2008-03-23
Comment: This little 3x5ish spiral bound flip book is more a bake sale-style cookbook you'd get at an Officer Wives Club or school cheerleader trip fund raiser than a real book. It has nice, easy to understand recipies that work well. Tried a couple. The pancake puffs (Eng translation) are buttermilk, old school. If you're more American than Scandanavian, just add 2-3 tablespoons of sugar to everything and it'll be great...
Not a bad buy, more useful if you like puffs or have a foot in northern Europe.

Summary: Tiny 2008-01-09
Comment: Make sure you look at the dimensions of this "cookbook." It's very tiny. Almost index card size. The recipes look okay, but are very common from what I've read so far. Not worth it, IMO, as a companion to an Aebleskiver pan (which is why I got it).
