Product Description
This is the first Haitian cookbook on the North American market! With African, French, Arabic and Amerindian influences, the food and culture of Haiti are fascinating subjects to explore. From the days of slavery to present times, traditional Haitian cuisine has relied upon staples like root vegetables, pork, fish, and flavor-enhancers like Pikliz (picklese, or hot pepper vinegar) and Zepis (ground spices). This cookbook offers over 100 traditional Haitian recipes, including traditional holiday foods and the author's favorite drinks and desserts. Information on Haiti's history, holidays and celebrations, necessary food staples, and cooking methods will guide the home chef on a culinary adventure to this beautiful island. Recipe titles are given in English, Creole, and French. Complete with b/w photos and illustrations.

Summary: Good buy 2008-12-17
Comment: I own this book and have made several recipes from it. They all came out tasting the way I remembered them growing up in Haiti. My only criticism is that as the title implies, the book only provides a "taste" of haitian cuisine. I am still waiting for the definitive haitian cookbook, with a significant section allocated to desserts and treats. I am dying for a great haitian cake recipe, complete with frosting that I can make for my daughter -- If you have ever tasted what I am thinking of, you know that it begs to be documented for the ages and should not disappear or remain the secret of a few families. I hope that the author and publisher of this wonderful book realize that their audience is clamoring for more and that they deliver.

Summary: Very Informative 2008-03-03
Comment: This is a great book and very affordable. I grew up in a Haitian household but I didn't watch my mom in the kitchen. Now I have the opportunity to cook like her....

Summary: I love haitian food! 2007-04-15
Comment: My hubby and I are both of African West Indian decent. My husband is haitian-american but does not know to cook haitian food! How awful. So, I bought this book for him and he agrees that all of the recipies and ingrediants are authentic from the spices to the names of the meals the selves. It smells and taste wonderful just like his mothers. Finally, he is cooking the haitian food i love!
